notes: i used morning star vegetarian chili crumbles, never found the canned chili in adobo, and doubled the recipe to save some for later.
“~1 pound ground beef/turkey/ (or nothing)
Half onion, diced
3 cloves garlic, minced
Canola oil
1 red bell pepper
1 green bell pepper
32 oz tomato sauce
2 cans kidney beans
14.5 oz canned tomato diced
1 Canned chipotle in adobo, one pepper, plus some juice
Red chili powder
Cumin
Salt and pepper
Saute the onion in oil for like a minute. Add the bell pepper, saute one minute. Add the garlic, saute. Add the canned tomato sauce, diced tomato, beans and canned chipotle.
In a separate pan, brown the meat (if you’re using it). Don’t cook it 100%, but add it to the chili and let it cook the rest of the way in there.
Once it’s simmered at least 30 minutes (the longer, the better), season with cumin, salt and pepper (either black pepper or cayenne if you want spicier). Serve with rice, or cornbread.
This also freezes well, so triple the recipe and freeze it for when you don’t feel like cooking!”
