because sometimes you want one cupcake instead of 24, and sometimes you want it in 7 minutes! this takes about 5 minutes to prepare, and 2 minutes to cook. not gonna lie, it’s not as good as a cupcake from the oven- microwaves tend to dry stuff out. but, it’s hard to complain when it’s ready so quickly.
-3 Tbs all purpose flour
-1/4 tsp cinnamon
-2 Tbs granulated sugar
-2 Tbs unsweetened cocoa powder
-1/4 tsp baking powder
-1/8 tsp salt
-1/2 tsp vanilla extract
-1/2 large egg (scramble the egg in a bowl and then just use half)
-2 Tbs vegetable oil
-2 Tbs water
mix everything together in a cup. any microwave-safe container will work just fine- I used a glass cup, but a mug or jar would also work. microwave the mixture for about 2 minutes on high- like any other cupcake, you can tell it’s done by inserting a toothpick to check whether it will come out clean. last, decorate however you like!
