chicken and waffles


waffle: eggo’s cinnamon waffle– classy, right? yum.

chicken: i bought 8 skinless chicken thighs for dinner last night, and was super excited to use some the leftovers this morning for chicken and waffles.

directions: place all 8 chicken thighs in a large ziplock bag, add about 1/4 cup of olive oil. throw in any herbs and spices you want– i used about 1/2 tsp thyme, 1/4 tsp smoked paprika, 1/4 tsp dried basil, 1/4 tsp dried oregano, 1/8 tsp onion powder, a bit of fennel, 1/2 tsp “caribbean spice,” salt and pepper. close ziplock bag and work spices and olive oil around until there is a fairly even coating on each piece of chicken. put in the fridge for about an hour.

preheat oven to 375f. using a large skillet over medium-high heat on the stove, sear the outside of each chicken thigh. then place chicken pieces (with any juice that came off) onto a foil-lined baking dish. bake for about 15 minutes, until no longer pink inside. let sit for another 10 minutes before serving.
