apple spice applesauce muffins

  • 1 cup sugar
  • 1/3 cup canola oil
  • 2 egg whites
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 cup applesauce
  • 2 cups flour
  • 1 apple

crumb topping:

  • 1/4 cup light brown sugar
  • 2 tbs flour
  • 2 tbs rolled oats
  • 2 tbs melted butter
  • 1/2 tsp cinnamon
  • 1/4 tsp salt


preheat oven to 324f. line muffin pan with cupcake papers. (i made 14 muffins) chop apple into very small pieces, and sprinkle about a teaspoon of apple bits into the bottom of each cupcake liner. in a large bowl, cream together the sugar, canola oil, and egg whites. next, add remaining muffin ingredients except flour, and mix well. add flour, and mix until barely combined. in a separate bowl, mix together all the crumb topping ingredients: sprinkle even amounts of crumb topping onto each muffin. bake for 25-30 minutes, until firm to the touch and a toothpick inserted comes out clean.
