lentils with sweet potato and coconut-curry sauce



same sauce as curry recipe from previous post with fish! just do everything exactly the same– except instead of adding fish, add 3/4 cup rinsed/sorted lentils and 3/4 cup cubed sweet potato, and cook until sweet potatoes and lentils are soft (about 20 minutes). add extra water to pot if sauce thickens too much, and adjust flavor by adding tomato paste.
