quinoa-veggie-sausage salad

i don’t really know what to call this! it was awesome though, and pretty healthy. it sounds like a lot of ingredients, but really it was just any random stuff that we found around.

start with quinoa: put 3/4 cup rinsed quinoa in pot with 1.5 cups water, 1 bullion cube (or just use chicken broth), 1 chopped onion, and 1 cup chopped carrots. bring to boil, and then reduce heat and simmer covered until water is absorbed.

roasted veggies: roast chopped broccoli, cauliflower, butternut squash, and chopped asparagus with olive oil/ salt/ pepper.

sausage: sautee chopped chicken sausage (cut this out or substitute meatless sausage to make this vegetarian)

goat cheese: break up bits of goat cheese

parsely: chop about a cup of fresh parsely

combine: after quinoa is cooked and veggies/ sausage are done, combine everything in a large bowl with salt and pepper to taste.
