salmon curry

valentines day dinner : ) really simple to make. if salmon weren’t so expensive, i would make this all the time! served with cauliflower roasted at 400F; cooked with olive oil, salt, pepper, and a bit of curry powder.

curry recipe from previous post. once onions are starting to cook (and cauliflower is in the oven, if you’re making that, too), season 1 lb of salmon with salt, pepper, and curry powder. bake until just barely cooked through. make curry sauce. remove the salmon from the oven and place in the fridge until cool enough to touch. break salmon apart into smaller pieces and place in the curry sauce. simmer for another 5-10 minutes, and then serve with basmati rice.
