strawberry rhubarb crumble


loosely based on this recipe:

super easy to make, and only took about 15 minutes in the oven! i made 2 identical ramekins full of crumbly deliciousness

fruit part: cut up about 1 cup of strawberries and 1 rhubarb stalk (chop rhubarb in slices about 1/4 inch thick.) separate into 2 ramekins. sprinkle about 1/4 teaspoon corn starch and 1/2 teaspoon sugar onto each, and then mix contents of each container.

topping: in a separate bowl, mix together: 2 tablespoons rolled oats, 1.5 tablespoons AP flour, 1/4 teaspoon salt, 2 tablespoons brown sugar, and 1/4 teaspoon cinnamon. add in about 1 tablespoon cold unsalted butter and mix everything by hand until it forms little crumbles.

tart: preheat oven to 400F. put about half of crumbly mix onto each ramekin. bake for about 15 minutes, or until top is browned and crisp, and fruit is bubbling. let sit until cooled a bit, and enjoy! some vanilla ice cream on top wouldn’t hurt.
