we got kinda crazy with this batch of sushi– no fish here! we used mostly leftover things we already had, including chicken from another meal.
start out by roasting some asparagus, broccoli, and sweet potato with olive oil/ salt/ pepper at 400F until lightly caramelized.
add some thin slices of cucumber and carrot, as well as avocado and goat cheese!
now do whatever you want, get crazy! the only minor constraint is not to put too much stuff in each roll, or else it won’t close.
1. avocado, chicken, sweet potato, and asparagus. the flavors were delicious, but i kinda missed having a crunch so i ended up shoving little pieces of cucumber into each piece.
