Mini Turkey Meatballs



  • 1 pound ground turkey
  • 2 tablespoons tomato paste
  • 2 tablespoons sundried tomato pesto
  • 1 tablespoon olive oil
  • 3 tablespoons water
  • 1/3 cup bread crumbs
  • 1/4 teaspoon dried fennel
  • 1/4 teaspoon dried coriander
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons chopped fresh parsley or basil


  1. Preheat oven to 400F
  2. Combine everything into a bowl and mix well.
  3. Form small meatballs (about 3/4 to 1 inch in diameter) and place formed meatballs on a large plate
  4. Heat vegetable oil or olive oil on a large pan. Sautee meatballs in pan until browned all over
  5. Place meatballs on foil-lined baking sheet. Cover with another piece of foil
  6. Cook meatballs until they reach 160F.
